and so easy!

Toss fruit into a pitcher or jar and steep for a bit and enjoy; or throw the fresh fruit(s) in the blender, add water, sugar, and lime juice, pour over ice, and be transported to the tropics!

These are dense, juicy, very sweet and low acid with a hint of citrus flavor. This weekend I made more amazing “Holiday Applesauce” with Gala Apples!  Of course you could always do dried apples, regular applesauce, fruit rolls, applepie filling or apple butter! Plenty of options to make some healthy and delicious snacks and treats!

Perfect for finger-food snacks in lunchboxes! Great to par boil and freeze! Make last-minute dinners easy. I soak in salt water, cut into consistent size, then rinse well. Blanche, plunge immediately into ice water to cool, and freeze in freezer bags. If you have an electric pressure cooker, prep the same way, put in steamer basket, add 1 cup water, and set on high/manual for 0 (zero!) minutes and carefully manually release immediately. Perfect, hands-free steamed broccoli!

Sourdough Bread

Sourdough Bread goes with everything! Freezes beautifully and can be reheated in the oven! Defrost on the counter, bag closed. Once defrosted, mist lightly with water and place immediately in a 325 degree oven for 10-15 minutes. Perfect with soups and stews!

*Recipe*  Breakfast Casserole
1 loaf of cinnamon toast bread
1 dozen eggs
1/2 teaspoon apple or pumpkin pie spice
Splash of milk/kefir or generous tablespoon of plain yogurt or rice/nut milk
Break up the loaf into a casserole dish. Beat eggs together andadd liquid of choice. Pour over loaf and mix a bit with your hands to spread throught and encourage the bread to absorb the egg mixture. Cooked covered 35-40 minutes or until puffed up and set in the center. Uncover and crisp up the top. Serve hot!
